The Sensory Lexicon attempts to establish a universal way to talk about, think about, and experience coffee. The language derived from this ambitious project was then adapted to a visual version, the Coffee Taster’s Flavor Wheel. The wheel is used all over the world by a variety of coffee professionals, and has been an essential way to connect our industry using flavor science and language. This class includes an in depth look at the history of lexicon and the wheel, how they changed coffee production, and a real cupping session where you’ll try multiple coffees the same way we use to evaluate and grade them for purchase in our roastery.
